Crunchy Toasted Pumpkin Seed Granola

October 29, 2016

On World Food Day, I was honored to be invited to work alongside Elaine Cheng, founder of Food Connections, at Science World for a food waste engagement event with Metro Vancouver – Love Food Hate Waste. She’s a passionate food waste advocate who spearheaded Vancouver’s very first Feeding the 5000, a city-wide campaign that served 5000 free lunches to the public, all made from rescued food.

As a proud representative of her team at Food Connections, I helped her prepare a few zero waste goodies for sampling at the event. Inspiring people to whip up recipes and get creative in the kitchen with ingredients that would normally be thrown out.

As Halloween is creeping around the corner, pumpkin seed granola seemed like the perfect seasonal recipe to create for this event.

Jalapeno Chili Cauliflower Popcorn

February 1, 2016

Jalapeno Cauliflower Popcorn | Rosy Cheeks Project
I started my Candida Cleanse two weeks ago and I’ve seriously been deprived of snacks and munchies.

What is Candida Overgrowth?

Candida, short form for Candida Albicans, is a fungus infection caused by an overgrowth of yeast. Common symptoms of Candida include fatigue, brain fog, chronic intestinal discomfort – gas & bloating, joint pains, weight gain. The Candida Albicans yeast is a part of the gut flora, a group of microorganisms that live in your mouth and intestine. When the Candida Albicans population starts getting out of control it weakens the intestinal wall, penetrating through into the bloodstream and releasing its toxic byproducts throughout the body. Find out more about Candida here.

On a restricted diet of only clean animal protein, non-starchy vegetables, and good fats, one can only hope to get a bit of a break and eat something more enticing to the palette. Anyone who knows me well knows how much I love popcorn. I love the intense burst of flavours, the crunchiness, and the fun of eating out of what seems like a bottomless container, reminiscent of date nights at the movie theatre.

Sweet Kabocha Squash Congee

November 23, 2015

Japanese Kabocha Congee | Rosy Cheeks ProjectYou know you’re in trouble when your foodie friend comes to visit you in Vancouver, the city of amazing food, beautiful people. and more amazing food. We put our food hats on and last weekend consisted of nonstop feasts, seafood, seafood and, did I mention seafood? But heck, YOLO.

But overindulgence comes with a price.

Stomach poisoning may just be one of the most unpleasant experiences of my life. After a full day of kindling with my dear friend, Mr. Toilet, I knew I had to restore my gut with healing herbs and easy to digest nutrients.

Gluten Free Thai Chili Salmon Loaf

October 19, 2015

I discovered a whole cabinet of mason jars filled with preserved salmon that my mom made a couple months ago. Well, I couldn’t just leave them there and not do anything with it. That would be doing in justice to these homemade salmon preserves!

Gluten Free Thai Chili Salmon Loaf | Rosy Cheeks Project

Lately, I’ve been working on learning how to work with gluten-free flours. And this was the perfect opportunity to work on some recipe making with the coconut flour and almond flour I got. Experimenting in the kitchen and making up recipes on the fly are always fun. I love the suspense of not knowing how it’ll turn out. Whether the recipe will be a keeper or a huge disaster.

This recipe took a couple test runs to gage the consistency that I wanted. This loaf is perfect for lunch or dinner as a main with some greens on the side.

Smoky Paprika Eggplant Dip

October 3, 2015

I’ve always enjoyed creamy yogurt veggie dips or cracker dips like chickpea hummus. But every time I finish eating, I end up feeling extremely bloated and have stomach cramps all day.

For someone with food sensitivities to legumes and dairy, this is what I get for following the wishes of my taste buds and disobeying the needs of my gut. Living with food sensitivities can be a real bummer sometimes.  Continue Reading…

Anti-Inflammatory Honey Spiced Ginger Turmeric Tea for IBS

September 14, 2015

Reducing inflammation is very important in preventing and relieving intestinal flare ups caused by digestive disorders like IBS, ulcerative colitis, or colic.

Anti-Inflammatory Honey Ginger Turmeric Tea for IBS | Rosy Cheeks Project

Last night in my Herbal Medicine class, we talked about healing herbs that are especially good for the digestive tract. Many of which are what we call carminatives, meaning these herbs are great at soothing and settling the gut wall, aiding digestion. Carminative herbs are also anti-spasmodic, meaning they prevent or ease spasms or cramps in the muscles.

The use of herbs are endless – as seasoning, spices, and even taken as a food on its own. But of course, we can’t forget the use of herbs in tea!

My green friends are back in action!

Introducing yet another granny smith apple snack recipe. I really enjoy green apples for it’s crispy, zesty tartness that red apples just don’t compare. Also maybe because I prefer sour over sweet things, green apples have become a core staple in my pantry.
